Years ago, my local grocery store was handing out samples of these delectable (and easy!) Savory Apricot Bites, and I’ve been making them every summer since.
Just halve the apricots, remove the pits, and spoon on a dollop of cream cheese (non-fat, neufchatel or full-strength, your choice.) Top with pistachios, either chopped, halved or whole. Again, your choice.
See? What did I tell you? Easy, easy, easy.
