Fudgey Coffee Ice Cream PieWhen I saw that today was designated National Coffee Ice Cream Day, this recipe immediately popped into my mind.  I’ve been making Fudgey Coffee Ice Cream Pie for literally decades.  It’s a traditional Mud Pie, but easier to make than most.  In fact, once you’ve made the crust, the rest of it is simply a matter of scoop and drizzle.  

Of course, coffee ice cream is the star, and adding hot fudge topping makes it even better.  Richer.  A bit decadent.  Finding coffee ice cream can be a little tricky sometimes, but once you snag a carton, you’ll whip up this dessert in nothing flat.   You don’t have to like coffee to like this pie.  It doesn’t have to be summertime for you to like this pie.   You don’t even have to be hungry to want a piece of this pie.

It’s that good.
