Quiche 2This crustless quiche is a must-try.  Light and cheesy, fast and easy to make, it’s even better the next day.  

I’ve had this recipe since I was first-married, and that was a lo-ong time ago.  Our first home together was a brand new mobile home, and back in the 70’s, they were popular, perfect for young couples.  They came furnished, were tastefully decorated, and very affordable.   A few doors down from us, I became friends with another new bride who was a great cook.  Our husbands both worked for Union Pacific, and over the years, our children were born close in ages.  I still keep in touch with Paula, and her recipe still endures. 

I have no idea what “Beachcomber” has to do with anything, but it doesn’t matter.  This quiche is delicious!
