Savory Apricot Bites

Years ago, my local grocery store was handing out samples of these delectable (and easy!) Savory Apricot Bites, and I’ve been making them every summer since.

Just halve the apricots, remove the pits, and spoon on a dollop of cream cheese (non-fat, neufchatel or full-strength, your choice.)  Top with pistachios, either chopped, halved or whole.  Again, your choice.

See?  What did I tell you?  Easy, easy, easy.

The season for fresh apricots is short, and the season is NOW, so you have to hurry.  Buy a dozen or so and make these Savory Apricot Bites today!

Savory Apricot Bites

Ingredients

  • 4 oz cream cheese, softened (I usually do most, if not all, of the brick)
  • 12 fresh apricots, halved
  • 1/2 cup pistachios, chopped (feel free to leave whole, too)

Instructions

  1. Stir cream cheese until smooth.
  2. Spoon a dollop into apricot halves.
  3. Garnish with pistachios.
