Fudgey Coffee Ice Cream PieWhen I saw that today was designated National Coffee Ice Cream Day, this recipe immediately popped into my mind.  I’ve been making Fudgey Coffee Ice Cream Pie for literally decades.  It’s a traditional Mud Pie, but easier to make than most.  In fact, once you’ve made the crust, the rest of it is simply a matter of scoop and drizzle.  

Of course, coffee ice cream is the star, and adding hot fudge topping makes it even better.  Richer.  A bit decadent.  Finding coffee ice cream can be a little tricky sometimes, but once you snag a carton, you’ll whip up this dessert in nothing flat.   You don’t have to like coffee to like this pie.  It doesn’t have to be summertime for you to like this pie.   You don’t even have to be hungry to want a piece of this pie.

It’s that good.

Fudgey Coffee Ice Cream Pie

Ingredients

  • For crust:
  • 25 Oreo cookies
  • 5 Tb. butter
  • For pie:
  • 1/2 gallon coffee-flavored ice cream
  • Hot fudge ice cream topping

Instructions

  1. Using food processor, crush Oreo cookies into fine crumbs.
  2. In medium bowl, melt butter. Add crumbs and stir together.
  3. Line a 9" pie plate evenly with crust. Refrigerate until firm.
  4. Soften ice cream and spoon over crust. Smooth surface, then drizzle with hot fudge topping.
  5. Freeze until ready to serve.

  • Oh my gosh, Pam ! I made this for my high school friends for dessert tonight and everyone thought it was fabulous, especially me! So easy and so delish! I must admit though, being the chocolate addict that I am, I don’t understand the idea of “drizzling” so I just spread the hot fudge sauce over the entire pie and it was to die for! Thank you for sharing!
