Quiche 2This crustless quiche is a must-try.  Light and cheesy, fast and easy to make, it’s even better the next day.  

I’ve had this recipe since I was first-married, and that was a lo-ong time ago.  Our first home together was a brand new mobile home, and back in the 70’s, they were popular, perfect for young couples.  They came furnished, were tastefully decorated, and very affordable.   A few doors down from us, I became friends with another new bride who was a great cook.  Our husbands both worked for Union Pacific, and over the years, our children were born close in ages.  I still keep in touch with Paula, and her recipe still endures. 

I have no idea what “Beachcomber” has to do with anything, but it doesn’t matter.  This quiche is delicious!

Beachcomber Quiche

Ingredients

  • 3 eggs
  • 3 oz cream cheese, room temperature
  • 1 cup cottage cheese
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped ham or cooked bacon

Instructions

  1. Preheat oven to 350 degrees. Grease 9-inch pie pan. Set aside. .
  2. In a large bowl, beat eggs. Beat in cream cheese, cottage cheese and butter until almost smooth.
  3. In small bowl, combine flour, baking powder and salt. Stir into egg mixture until thoroughly blended.
  4. Beat in milk until blended.
  5. Pour into pie pan. Sprinkle evenly with cheese and bacon or ham.
  6. Bake 35 - 40 minutes until mixture is firm in center.
